Make a short note when you open a bottle, so your next choice rests on your own experience rather than memory alone.

Record what you will want to know later
A few honest lines are often more useful than a formal tasting sheet. Include enough to make the next bottle easier to choose.
- Rating or overall impression.
- Aroma, palate, finish, and any food pairing.
- Occasion and who drank it.
- Whether you would open or buy it again.
- A photo when the bottle or occasion is worth remembering.
Update the remaining bottles
Reduce the quantity when the note is for a bottle from your cellar. If the wine seemed young, tired or exactly right, adjust the drinking window for the bottles that remain.
